CULN 1130 - Introduction to Baking Fundamentals

(Prerequisites: CULN 1101  or HT 1101 ; CULN 1102 ) (Corequisite: CULN 1103  or department approval)

Includes the theory, skills and techniques of baking fundamentals. Topics include scaling, methods of mixing, processing of ingredients, ingredient functions and baking math. The retail production and merchandising of cookies, pies, pastries, quick breads, breads, sweet yeast and cakes will be introduced. Proper equipment use and safety will be stressed.
