Introduces food code guidelines for food safety and sanitation. Emphasis is on identification and controls of biological, chemical and physical hazards. ServSafe? Food Protection Manger Certification is available. Hazard Analysis Critical Control Point (HACCP) based models and facility controls are introduced.
